    Caesar salad is now a common meal in most households and restaurants because of its varying benefits. And having it in your table is a good step to a healthy meal. Try this simple homemade Caesar Dressing-Gluten Free.


    Caesar has to be one of my favorite salad dressings, tied closely with Ranch dressing. However, commercial varieties are full of additives, preservatives, MSG and pro-inflammatory vegetable oils.  Luckily, both of these are easy to make at home and taste SO much better than their industrially processed counterparts. Feel free to adjust the ingredients to suit your tastes- see notes about making a Spicy Caesar.

    Simple Homemade Caesar Dressing

    1 pasture-raised, organic egg yolk
    1-2 tsp organic Dijon-style mustard
    1 TBL lemon juice (freshly squeezed)
    1/2 cup extra virgin olive oil
    1 clove garlic, grated or minced
    Dash organic onion powder
    Dash of cayenne pepper
    ½ tsp fish sauce, or to taste
    1 TBL fresh ground raw parmesan cheese
    ½-1 tsp unrefined sea salt, or to taste
    Freshly ground black pepper

    Combine all ingredients in a wide mouth glass mason jar and blend using an immersion blender. Taste and adjust seasonings to your liking. You can thin with a bit of water if dressing is too thick.

    Like Spicy Caesar? Adjust the cayenne to your liking, adding a dash or two at a time, tasting between additions.
