    Diabetes, is a group of metabolic diseases in which a person has high blood sugar.  And people with this kind of disease sometimes finds it hard in choosing what they should eat. So here is a recipe for you.

    Diabetics have a tough time during any festive season. So,  we give you this exotic, diabetic friendly apple crepe recipe, which is tasty and packed with nutrients. Follow these easy steps to prepare this healthy apple crepe recipe.

    Ingredients

    For The Pancakes
    1/4 cup plain flour (maida)
    1/4 cup cornflour
    3/4 cup low fat milk (99.7% fat-free)
    a pinch salt
    1/4 tsp melted low fat butter

    For The Apple Filling
    2 tsp low fat butter
    2 apples, thickly sliced
    1 tbsp sugar substitute
    1/4 tsp cinnamon (dalchini) powder
    1 tsp lemon juice

    Other Ingredients
    1/2 tsp low fat butter for greasing

    Method
    For the pancakes

    Combine the plain flour, cornflour, milk, salt and ¼ cup of water in a bowl, mix well until no lumps remain. Set aside.
    Grease a non-stick pan with butter and pour 2 tbsp of the batter, tilt the pan around quickly so that the batter coats the pan evenly.
    When the sides starts to peel off, turn the pancake around and cook the other side for a few seconds.
    Repeat with the remaining batter to make four more pancakes. Set aside.

    For the apple filling
    Heat the butter in a non-stick pan, add the apple slices, sugar substitute, cinnamon, lemon juice and 2 tbsp of water and mix well.
    Cook on a medium flame until the apple slices are cooked, stirring once in-between.
    Divide the apple filling into five equal portions. Set aside.

    How to proceed

    Place a pancake on a dry, flat surface and place a portion of the apple filling on one half of the pancake.
    Fold the pancake over the filling to make a semi-circle.
    Repeat with the remaining ingredients to make four more crepes.
    Serve immediately.

    Tips
    Do not overcook the apples as the filling will become soggy, making it difficult to serve the crepes.
